cooking instructions for fish

My parents both worked when I was a kid so I was expected at an early age to get dinner going before they got home. I' ve always enjoyed cooking and basically had to teach myself. All of my recipes have been trial and error.

I will not serve anything that I haven' t tasted first.

I became ill several years ago and had to quit my job. Since then, cooking has helped considerably and my cooking has dramatically improved.

When I cook for class or church, I have folks lined up asking me what I brought. No joke. I love feeding folks! I love stir fried/ sauted meats with a punch of flavor. I believe the regular person can cook regular food and have it tase special.

I hate pre- packaged crap we serve many times to our families due to time constraints.

I have experimented with many things in order to find flavor and usually, low fat options to feed my family. I became very tired of " meat, veggie and potato" food every night. So I have experimented with many recipes and tastes to develop a taste my family and friends love for the regular dinner. Southern!

I have tried to experiment with many of these traditions in order to get them lower in salt and fat. However, some things you just can' t change and get good taste. So, with those foods ( like fried chicken! ) , we just eat them occassionally! I did develop several recipes that are alternatives. My Lime Chicken is one of our favorites.

It' s not fried chicken, but the flavor is wonderful.

Learning that steamed vegetables don' t have to be liquified! 3 minutes is about my fav! Lime chicken I developed. Everytime I make it for folks, I get phone calls for the recipe.

Also, my oven roasted chicken and turkey are BIG hits. Mashed potatoes, biscuits, baked beans, carmalized cinnamon toast on homemade bread, etc. Fried Rice! The first time I made it for my boyfriend ( now my husband) , I was only 16.

I thought you just fried the rice! He ate it, or should I say, crunched it down, but it' s been 25 years and we still laugh about it. I' m also not good at making beautiful layer cakes. I prefer sheet cakes! I also prefer cakes that don' t have tons of steps. The easier the better.

Also, I guess homemade biscuits were a tragedy for my family! It took me about 15 years to learn to make them. They went through many, many, many terrible biscuits until I finally got it. Biscuits are one of those things you just can' t TELL someone how to make them. . . you have to show them. At least that' s how it was for me.

The alleged gangster also apparently penned a separate autobiography that was found by authorities at Bulger' s Santa Monica, California, apartment after his arrest there, courts documents say. Bulger, 82, has pleaded not guilty to all charges against him, including 19 murder counts.

Once one of the FBI' s 10 most wanted fugitives, he is currently being held without bail and faces an impending racketeering indictment after authorities tracked him down in June 2011 at his California home. Bulger was arrested after being lured out of his apartment with an FBI ruse: He apparently received a phone call and was told his lock box, located in the basement parking lot of his building, had been broken into. When Bulger went down to check, FBI agents arrested him. His alleged barbarity as an Irish- American mobster in Boston inspired the Jack Nicholson character in Martin Scorsese' s 2006 film " The Departed. "

& quot; Enough salt already, & quot; sighed Theo Hodge on a recent evening as I added more salt to a plat de resistance I was preparing for us. Considering that he was my doctor, the scolding came as no surprise.

But as a chef and food writer, I know sodium chloride salt is an important ingredient in many recipes. Both professional and home cooks equate salt with flavor.

However, the more we use, the more our palates desire. Hodge' s insistence was a matter of health, so I would have to come up with other ways to enhance future dishes.

The year before, my failure to heed his warning about soaring cholesterol levels landed me in the ER with a heart attack. Once the doctors cleared the arterial problem, it was up to me to keep it that way, but I was so busy cutting saturated fat from my diet that I did not pay attention to sodium intake, which was also important to my heart health. I made a common error, figuring that since my blood pressure was routinely normal, I could continue to salt my food without worry. & quot; Sodium has benefits, like helping to maintain the body' s right balance of fluids, & quot; says my cardiologist Richard Katz, MD, director of the cardiology division of George Washington University. & quot; But ingesting too much salt is a prime cause of increased blood pressure. is a major cause of heart attacks and strokes, both of which can be reduced by minimizing salt intake. & quot; Even among healthy adults there is usually room for improvement in the blood pressure department. & quot; If blood pressure is 125/ 70, it' s better at 120/ 70, & quot; Katz says. ( The American Heart Association [ AHA] notes that low blood pressure is relative for each person and is a concern when it drops suddenly. Your doctor can help you reach a blood pressure goal that best enhances your health. ) Various organizations, including the USDA, AHA, and Cooking Light magazine, recommend less than 2, 300 milligrams sodium daily ( the amount in one teaspoon of table salt) for healthy people. Most Americans consume closer to 4, 000 milligrams a day. & quot; Only a quarter of sodium intake actually comes from salting our food, & quot; says AHA President Dan Jones, MD. & quot; More than 75 percent of sodium in our diets comes from processed foods. & quot; Salt is a natural preservative and it enhances flavor, so it' s no surprise that salt and other forms of sodium are included in packaged foods.

Because salt is so pervasive in our food supply, & quot; One has to be sodium- conscious at every step: at purchase, at preparation, and at consumption, & quot; says Jones. The most effective overall strategy to control sodium intake is to cook food at home as often as possible using fresh fruits and vegetables, grains, low- fat dairy products, fresh meat, poultry, and fish. Editor' s Tip: Homemade broths and sauces often contain less sodium than store- bought versions. The first step to keep sodium under control is to make smart choices at the grocery store.

Choose sodium- free, low- sodium, or no- salt- added convenience foods. Sometimes organic versions of packaged foods are lower in sodium than regular and reduced- sodium versions, but not always. Check the label. Reading the Nutrition Facts Panel is an easy way to gauge the amount of sodium present in a food.

If an item contains more than 20 percent Daily Value ( DV) of a nutrient, a serving of that food is considered to contain a high amount of that nutrient, according to the FDA; five percent DV of a nutrient is deemed low. For sodium, 20 percent DV equals 460 milligrams; five percent DV sodium is just 115 milligrams. Lower- fat or fat- free products can be higher in sodium than their full- fat counterparts: An ounce of full- fat sharp cheddar cheese has less sodium than one ounce of fat- free cheddar. When fat, a major vehicle for flavor, is removed, other ingredients like sodium may be added to compensate. Still, if you' re trying to limit saturated fat in your diet by enjoying low- and fat- free foods, the trade- off may be worth it if you limit sodium in other areas.

Ingredients processed with sodium still have a place in the cupboard, provided you use them judiciously. Low- sodium soy sauce, tamari, and fish sauce add meaty, round notes in addition to a salty flavor.

Canned tomato products can stand in for fresh in soup or chili when good fresh ones aren' t in season. A range of cheeses and bacon also offer a salty boost along with their own distinct flavors in or the .

Cook sensibly You also can control sodium when cooking. Rinse and drain canned foods to wash away some of the salty components in the packing juices, even if you can' t eliminate additives the food may have already absorbed.

For example, rinsing and draining capers or olives would barely make a dent in the sodium content because they are preserved with a salty brine solution and absorb the sodium. But for an item like canned beans, draining the juices cuts some sodium, while rinsing and draining shaves even more.

When cooking starches or grains, don' t salt the cooking water, so the noodles or rice don' t absorb additional sodium dissolved in the liquid.

Marinating is a smart way to infuse meats and fish with flavor. Mixing your own marinades takes just a few minutes and allows you to control sodium. Traditionally a marinade is an acidic liquid - - citrus juice or vinegar, for instance - - that boosts flavor after an ingredient soaks in the mixture.

And since marinades rely on acid, spices, herbs, and aromatics for flavor, a sprinkle of salt before or after cooking intensifies the mixture' s qualities. Even when marinades include higher- sodium components, like fish sauce or soy sauce, ingredients absorb minimal amounts of the marinade. In a pinch, choose low sodium bottled marinades. ( In general, you should skip the salty preseasoned or marinated options offered at many meat and fish counters. ) Mouthwatering marinades that boost flavor without adding a lot of fat. During my career as a professional chef, I often used ingredients along with salt to impart flavor; now I' ve learned to balance flavors with less of the mineral. Salty is one of the senses of taste, and salt - - whether kosher, sea, or table variety - - supplies that sense of taste to foods that lack it.

Instead of adding salt at every step in a recipe, I now often use salt at the very end, such as sprinkling steamed vegetables with a pinch of a crunchy finishing salt like fleur de sel, which puts the salt granules on the surface of food, heightening that sense of flavor. Any salt added at the end of cooking will also bolster the food' s aromas ( another important factor for sensing tastes) .

For a final flourish, I find that aromatic grated lemon or lime rind brings clean, citrusy flavor while the fruit' s juice adds a pleasing acidity that brightens other seasonings in soups, kebabs, or relishes and chutneys.

I rely on a rainbow of peppercorns - - zesty white ones to pair with potatoes; green ones to add a fresh, clean note to beef tenderloin; and black to proffer pungency to almost everything - - fresh and dried herbs, and spices for sodium- free flavor. Eat well As it turns out, the less salt you consume, the less your palate craves, according to a study published in 2007 in the Journal of the American Dietetic Association. After two weeks on a control with 3, 500 milligrams of sodium a day, 354 participants were assigned to either continue the control diet or follow the DASH diet ( a diet emphasizing low saturated fats, plenty of fruits and vegetables, whole grains, and low- fat dairy products) . Over the next three months, the diets' sodium contents were adjusted every 30 days: low ( on par with average sodium intakes in non- Western countries) , intermediate ( the current recommendation for 2, 300 milligrams of sodium a day) , and high sodium ( just under the average American' s daily sodium consumption) .

At the end of the study, researchers discovered that participants had high levels of compliance at each of the three sodium levels, but volunteers rated the intermediate sodium level to be most acceptable. & quot; I' m convinced that salt taste is learned and conditioned, & quot; says study author and researcher Frank Sacks, MD, Professor of Cardiovascular Disease Prevention at the Harvard School of Public Health. I' ve found that to be the case. Cutting back on sodium hasn' t been as hard as I thought it would be.

I' ve incorporated lower- sodium convenience options into my cooking.

I' ve shifted to using high- quality, salty ingredients as accents or garnishes instead of a main ingredient in sauces or pizza toppings.

Then simple techniques, like infusing broth with Parmigiano- Reggiano rind to enrich the flavor of a soup, or serving dishes piping hot ( when appropriate, because heat heightens the palate' s sense of taste) , are easy to do. And I' m also encouraged to know that as time goes on, my palate will adjust to a lower- sodium diet, and my heart will be happier and healthier for it. Ubiquitous mineral Sodium partners with other compounds ( besides the well- known sodium chloride) as a food additive. Cake mixes, flavored milks, luncheon meats, jarred condiments, and snack foods may include ingredients that add sodium.

The mineral may also seem hidden since many of these foods may not taste salty. Here are just a few of the many forms sodium can take: Bean counters Here' s a look at the sodium content of various canned black beans on the market, and how label reading, and rinsing and draining, contribute to sodium savings.

Always check labels as different brands may vary slightly. & # 8226; 1 ( 15. 5- ounce) can black beans, drained = 859 milligrams & # 8226; 1 ( 15. 5- ounce) can black beans, rinsed and drained = 815 milligrams & # 8226; 1 ( 15. 5- ounce) can 50% - less- salt black beans, rinsed and drained = 780 milligrams & # 8226; 1 ( 15- ounce) can organic black beans, rinsed and drained = 420 milligrams & # 8226; 1 ( 15- ounce) can unsalted black beans, rinsed and drained = 90 milligrams For more tips on making healthy taste great, try Cooking Light - Copyright 2009 magazine. Farnborough, England ( CNN) - - Spending big to buy airplanes by the dozen is nothing new for Steven Udvar- Hazy: In the last 37 years, the aircraft leasing pioneer has purchased thousands of planes, which were then rented to the majority of the world' s major carriers.

And he did it again this year at the arena of the 47th Farnborough International Airshow. Udvar- Hazy, who last February quit industry leader International Lease Finance Corporation ( ILFC) , has emerged as the biggest buyer at the world' s largest gathering for the aviation industry, placing orders valued in the region of $ 10 billion.

On Monday, his four- month old company, Air Lease Corporation ( ALC) , struck a deal with Airbus for 51 planes of the A320 family, while one day later Hazy' s spending spree continued with the order of up to 60 Next- Generation Boeing 737- 800 models and up to 20 E- 190 jets from Embraer.

Udvar- Hazy' s dynamic comeback at Farnborough has been widely described as one of the most encouraging signs that the recession- battered aviation industry is finally bouncing back. & quot; The airline industry is going to go through a tremendous growth period, & quot; Udvar- Hazy told CNN from Farnborough. & quot; There are parts of the world that are growing in traffic, double digit rates every year. The airlines have to replace a lot of aging aircraft, so we think this is a dynamic business with huge opportunities. & quot; For his new venture, Hazy managed to secure about $ 1. 3 billion of equity capital and $ 2 billion of committed debt financing to fund a series of aircraft acquisitions.

ALC said that it aims to create a fleet of more than 100 commercial jet planes by spring 2011. & quot; His market timing has always been impeccable for ordering, and I sure hope he' s right because we' re ordering some too, & quot; Norm Liu, president and chief executive of General Electric Co. ' s aircraft leasing unit, said in a report. Budapest- born Udvar- Hazy is regarded as one of the most influential figures in commercial air flight and the creator of the multibillion- worth aircraft leasing industry.

In 1973, he founded ILFC, which in the following years grew to become the market' s dominant leasing company.

Udvar- Hazy sold ILFC to AIG in 1990 for $ 1.

3 billion but continued to run it until last February when he stepped down amid ongoing liquidity issues in the wake of the insurer' s near- collapse. However, retirement was not yet an option for the 64- year- old billionaire, who was ranked 363rd on the World' s Richest People list in 2010 by Forbes. & quot; I went home and I was retired for about three hours. And my wife said, ' get out of the house, do something productive. ' So, I formed a new company and we got to work.

And it is very exciting, & quot; he told CNN.

When asked about last February' s events and having to part ties with the company that he created and built into an industry giant, Udvar- Hazy said that there was no other option. & quot; It is tragic, & quot; he asserts. & quot; AIG was a great company, ILFC is a great company, and unfortunately circumstances came about that none of us had control over. I felt the time was right to create a new company that is completely from a clean sheet of paper. And none of these legacy issues of the past. & quot; But for the aviation visionary, who pilots his own Gulfstream V business jet, there is no time for resentment or living in the past. & quot; I' m not bitter, I' m looking forward, & quot; Udvar- Hazy says with a smile. & quot; In aviation we' re all optimists and we all look forward, we can' t look back - - we learn from our experiences but there is no bitterness. & quot;

Alongside Switzerland' s and Sweden' s , Germany' s were possibly the most influential band to come out of Europe during the 1980s. By taking the hard riffing and minor- key melodies handed down from masters like and , then infusing them with the speed and energy introduced by the burgeoning movement, crystallized the sonic ingredients of what is now known as .

Sadly, just as they were on the verge of breaking to a wider audience - - even flirting with American success - - the band' s meteoric rise was rudely interrupted by internal strife and a string of bad business decisions. These blunders kept them from ever regaining their original momentum, but took their hard- knock lessons in stride and continued to prosper in the international arena on their own terms. More importantly, they remained the benchmark by which most every band is still measured. were formed in Hamburg, Germany, by guitarists and , bassist , and drummer . Originally named and then before morphing into in 1982, they signed with Germany' s own fledgling Noise International two years later. With also handling vocals and the bulk of songwriting duties, the quartet recorded its self- titled debut mini- album in early 1985.

The full- length and the maxi- single followed the year after, and the media were soon buzzing over the band' s - fueled interpretation of classic . Countless fans across Continental Europe were also fast converting to the band' s cause, but remained dissatisfied with his singing ability, and felt needed a proper frontman in order to achieve their full potential. Enter teenage vocalist , whose high- pitched delivery followed in the footsteps of previous banshees like and . The new chemistry proved as explosive on- stage as it did in the studio, and with their classic lineup now intact, were ready for the big time. Returning to the studio in early 1987, the band emerged in May with , a landmark recording that remains arguably the single most influential album to date.

Its volatile combination of power and melody would inspire an entire generation of bands, and transformed into bona fide superstars all over Europe and the U. K. , even making tentative inroads into America at the time. The band toured relentlessly for the rest of the year and into 1988 ( including a lengthy opening stint with ) , but despite this manic work schedule, still found time to record the aptly titled . Released in September 1988, the record was another blockbuster that crashed the U.

Top 30, but its uneven songwriting ( especially from longtime leader ) revealed the beginnings of a major band crisis. ' s watershed performance at that year' s Donington Monsters of Rock Festival proved to be their crowning glory, but for , his dream come true also represented the culmination of his ambitions for the group. Shockingly, the guitarist soon announced his departure from the band he had helmed to the top, claiming that were now too big a beast for him to control. ( He would soon make a fresh start with a new outfit called , which, to no one' s surprise, sounded remarkably like . ) But the remaining members of weren' t about to let their shot at stardom slip away, and after drafting former guitarist , they got right back to work with a sold- out tour of the U. Impressed by the band' s momentum, giant EMI stepped in and offered to sign away from the ever troubled Noise Records, but in doing so, wound up igniting a legal dispute that would sideline the group for nearly two years. Several live albums ( " Live in the U.

K. " for Europe, for Japan, and " I Want Out: Live" for the U. S. ) were released to distract the fans during this hiatus, and the band obtained added support from the mighty management team ( , , etc. ) to boot. Confident that they' d accumulated little, if any rust from their extended layoff, finally returned to action with the oddly titled in 1991. But no amount of EMI or muscle could compensate for the scattered, unfocused songwriting that dominated the album. Furthermore, the band' s quirky attempts at humor had grown so forced that fans weren' t sure what to make of furious anthems with names like the title track and " Heavy Metal Hamsters. " The record bombed in no uncertain terms, as did its even more schizophrenic follow- up, .

Recorded in 1993 by an obviously shell- shocked band, its poor showing only exacerbated growing internal dissension, which culminated with the ousting of both ( off to launch a solo career) and due to drug- related physical and mental health issues. Fair- weather friends EMI and also decided to cut their losses at this time, leaving the shattered remnants of to fend for themselves. Attempting to regroup as fast as possible, brought in new singer and drummer to record 1994' s , a small but determined step in the right direction. Then tragedy struck, when former drummer - - a diagnosed manic depressive whose worsening condition had been partly to blame for his dismissal - - took his own life, throwing himself in front of a train near his native Hamburg. Shaken to the core but as driven as ever, dedicated 1996' s to their fallen friend, and, coincidentally, the album turned out to be the strongest since their glory years, doing much to resurrect their career.

The ensuing tour spawned the double- disc set and confirmed the band' s return to form as major players in the international arena ( in Europe and Japan, they were arguably bigger than ever) . continued to prosper with 1998' s , 1999' s celebratory covers album, and 2000' s , and not even the departure of longtime members and could slow them for long. Now regarded as elder statesmen of Euro- , celebrated their achievements with 2002' s greatest- hits set. This was followed by 2003' s , which introduced new guitarist and featured ' s guesting on drums until a permanent replacement could be found in ( ex- , , and many more) . left the group in 2005 and was replaced by drummer Dani Lble , who appeared on that year’ s critically acclaimed . arrived in 2007, and was followed by in 2010. ~ Eduardo Rivadavia, Rovi

One of the premiere names in the field of home- listening music, ' recordings retained the abrasive flavor of early pioneers and explored the periphery of even while coddling to his unusual ear for melody, the occasional piece of vintage synthesizer, and distorted beatbox rhythms. While his side projects - - including , , , , and - - have often emphasized ( or satirized) his debts to , , and , Paradinas reserved his most original and exciting work for major album releases as . Early LPs were based around the most ear- splitting buzz- saw percussion ever heard ( in a musical environment or otherwise) , with fast- moving though deceptively fragile synthesizer melodies running over the top.

As Paradinas began weaving his various influences into a convincing whole, his work became more fully developed ( though possibly not as exciting) , a fluid blend of breakbeat and with effects and the same brittle melodies from his earlier work. Born in Wimbledon ( though he grew up in several other spots around London) , Paradinas began playing keyboards during the early ' 80s and listened to bands like and . He joined a few bands in the mid- ' 80s, then spent eight years on keyboards for the group .

During that time, however, Paradinas had been recording on his own as well with synthesizers and a four- track recorder. When disintegrated in 1992, he and bass player bought sequencing software and re- recorded some of Paradinas ' old material. After the material was played for and - - the duo behind and as well as being the heads of Evolution Records - - they wanted to release it; recording commitments later forced and to withdraw their agreement, though by that time ( aka ) had also heard the tracks and agreed to release a double- album for his label, Rephlex Records.

The debut album for ( paraphrased from the side of a blank tape and pronounced " mew- zeek" ) was 1993' s .

The LP set the template for most of Paradinas ' later work, with at times shattering metal- cage percussion underpinning a collection of rather beautiful melodies. The Rephlex label was just beginning to flourish, with added journalistic attention paid to ' s recent , and though began to feature less in label- doings than co- founder Grant Wilson Claridge , later Rephlex work by , ( aka ) , and made it among the cream of home- listening labels. When began taking college more seriously ( something Paradinas had attempted briefly, from 1990 through 1992) , he officially bowed out of . Second album was scheduled to be released in mid- 1994, though only 1000 copies made it out of the gate. ( It was officially issued by Rephlex in 1996 after Paradinas served papers on the label. ) Paradinas ' first major- label release came later in 1994, after he undertook a remix project for Virgin Records. The EP was one of the most high- profile examples of the remix- by- obliteration movement, a burgeoning hobby for many producers in which a - song reworking would bear no resemblance to - - or trace of - - the original.

Though the EP was hardly a prime mover in the sales category, Virgin signed Paradinas to a hefty contract and gave him his own Planet µ sub- label to release his own work as well as develop similar- minded artists. Written into his own contract was a provision for unlimited recording under different names, and during 1995 Paradinas definitely took it to task: he unveiled three aliases and released as many albums in less than a year' s time. The nu- skool label Clear released his debut single as early in the year; it mined the fascination with Star Wars and music shared by producers like , and , head of Mo' Wax Records. Clear also released the first Paradinas alias full- length, ' s " Makes. ARacket" , later in 1995.

Although they were still audible, the LP downplayed his influences in favor of some rather cheesy synthesizer figures and a previously unheard debt to . The distortion re- appeared on Paradinas ' second LP of the year, by .

The first American- only release of a Paradinas album ( it appeared on ' s San Franciso- based Reflective Records) , its sound had the metallic feel of the first two LPs but with a less- dense production job.

Just one month after , Paradinas released his first proper LP for a major label, . The album included tracks recorded from 1993 to 1995, and though it was quite a varied album, the distance appeared to give it quite a disjointed feel. Paradinas spent 1996 releasing a second album ( for Warp) and his first as ( " Shaped to Make Your Life Easier" for Belgium' s SSR/ Crammed Discs) . If you have signs and symptoms of dumping syndrome, you' re likely to first see your family doctor or a general practitioner.

However, you may be referred to a doctor who specializes in treating digestive system disorders ( gastroenterologist) . Because appointments can be brief, and because there' s often a lot of ground to cover, it' s a good idea to be prepared.

Here' s some information to help you get ready, and what to expect from your doctor. What you can do Be aware of any pre- appointment restrictions. At the time you make the appointment, be sure to ask if there' s anything you need to do in advance, such as restrict your diet.

Write down any symptoms you' re experiencing, including any that may seem unrelated to the reason for which you scheduled the appointment. Write down key personal information, including any major stresses or recent life changes. Make a list of all medications, as well as any vitamins or supplements, that you' re taking.

Take a family member or friend along. Sometimes it can be difficult to absorb all the information during an appointment. Someone who accompanies you may remember something that you missed or forgot.

Write down questions to ask your doctor. Your time with your doctor is limited, so preparing a list of questions will help you make the most of your time together. List your questions from most important to least important in case time runs out.

For dumping syndrome, some basic questions to ask your doctor include: What is likely causing my symptoms or condition? Other than the most likely cause, what are other possible causes for my symptoms or condition? What kinds of tests do I need? Is my condition likely temporary or chronic? What is the best course of action?

What are the alternatives to the primary approach that you' re suggesting? Is there a special diet I need to follow, and should I see a dietitian?

I have these other health conditions.

How can I best manage them together?

Are there any restrictions that I need to follow? Should I see a specialist? What will that cost, and will my insurance cover it?

Is there a generic alternative to the medicine you' re prescribing me? Are there any brochures or other printed material that I can take with me? What Web sites do you recommend? In addition to the questions that you' ve prepared to ask your doctor, don' t hesitate to ask questions at any time that you don' t understand something. What to expect from your doctor Your doctor is likely to ask you a number of questions.

Being ready to answer them may reserve time to go over points you want to spend more time on.

Your doctor may ask: When did you first begin experiencing symptoms? Have your symptoms been continuous or occasional? How long after eating do your symptoms begin?

Have you noticed that certain foods make your symptoms worse? How severe are your symptoms? What, if anything, seems to improve your symptoms? What, if anything, appears to worsen your symptoms? & copy; 1998- 2011 Mayo Foundation for Medical Education and Research ( MFMER) .

He is hosting & quot; No Bias, No Bull& quot; at 8 p. m.

ET on CNN while Campbell Brown is on maternity leave. ( CNN) - - A lot of folks are always saying they like to keep it real, that they want authenticity and straight talk.

Yet when someone actually does it, there is hell to pay. Welcome to the world of Miss California, Carrie Prejean, who, since she answered a question regarding same- sex marriage in Sunday' s Miss USA pageant, has been savagely attacked by those who oppose what she had to say.

Leading the burn- her- at- the- stake parade is media opportunist Perez Hilton, the self- described gossip queen, and the individual who kick- started this controversy by asking the initial question as to whether the issue of same- sex marriage should be left up to the states.

It seems that Hilton, who is gay, was none too pleased that Prejean chose to actually give her personal opinion on the issue, and ripped her on his blog after the show, using crude obscenities as he continued to attack her at every turn on his media blitz. Hey, Hilton, from a real journalist to a wanna- be who traffics in gossip: Never ask a question if you' re unprepared for the answer! Frankly, this whole story is pretty stupid.

Isn' t the whole point of asking a question to get someone' s true feelings, rather than the plastic and superficial answers we are all used to receiving?

Sure, Prejean could have gone the safe route and given one of those answers that reveal nothing and is hard to decipher - - you know, the ones politicians give all the time - - but no! She actually gave her real opinion, and is now being torn to shreds for it. She opposes same- sex marriage.

OK, fine.

So what if she had said, & quot; Hey, I' m in full support of same- sex marriage. & quot; Would she now be celebrated on gay- focused blogs, magazines and Web sites? Would her detractors actually be saying how open she is and that she' s a great person? is undoubtedly a hot button issue.

And being from California, the site of Proposition 8, the ballot initiative that voters approved outlawing same- sex marriage, Prejean has surely had to hear the debate go back and forth. But her remark isn' t outside the mainstream. A CNN/ Opinion Research Corp. poll shows that 55 percent of Americans are against same- sex marriage, and Proposition 8 did pass in her state 52- 48 percent. What' s interesting about this is that many of the same folks who are slamming her for her remark voted for President and Vice President Joe Biden, who both have the same belief: that marriage should be between a man and a woman.

Even Secretary of State Hillary Clinton made it clear that she has the same view, and it was her husband, President , who signed the In Defense of Marriage Act, the federal law that forbids states from having to recognize gay marriage in other states. In other words, four of the biggest liberals in the country have the same belief as Prejean, but a beauty pageant winner is being torn to shreds. Hello, hypocrisy! Those who criticize Prejean have the same right as she does to express their viewpoints. But enough with all the political correctness, where someone says she should have danced around the issue, smiled and move on.

At the end of the day, we all have to be true to ourselves. Whether it' s a gay gossip writer who favors same- sex marriage or a heterosexual woman who is against same- sex marriage. The day we condemn folks for speaking honestly is the day we become a bland society.

Maybe we' re already there. The opinions expressed in this commentary are solely those of Roland Martin.
